A chocolate laboratory in Italy will be good for chocolate eaters -- and farmers

Wine has its sommeliers and coffee its graders — people who taste and compare these products systematically. But until now, cacao has lacked such a process, and implementing it appears to be good for chocolate lovers and farmers alike.
