This is classic Japanese sauce that is typically served on panko crusted pork cutlets. But… it can also liven up a steak. Give it a try!
Yield: 2 Cups

2 Tablespoons hot water
Mix this together and reserve a moment.
½ Cup ketchup
2 Tablespoons minced ginger
1 Scotch bonnet chile, stem and seeds discarded, minced
3 garlic cloves, minced
3 Tablespoons of granulated sugar
4 Tablespoons Worcestershire
4 Tablespoons tamari or soy sauce
4 Tablespoons rice wine vinegar
2 Tablespoons sake
Zest of one orange
Mix all of this together and add the dry mustard mixture.
